Carbonara Gainesville Opening Soon: What to Know About the New Italian Restaurant at Virginia Gateway

Gainesville’s highly anticipated new Italian restaurant, Carbonara, is almost ready to open.

Chef and owner Mike Cordero expects the new Carbonara at Virginia Gateway to open September 9, 2026, pending final approval from the health department, according to an August 25 report by Dawn Klavon of Northern Virginia Magazine.

That is a major update from when we first reported that Carbonara was taking over the former Bar Louie space at Virginia Gateway.

Now the restaurant is essentially finished, and we know much more about what Gainesville diners can expect.
